Potato And Mozzarella Pie
- 2 lb. potatoes
- 1/4 c. butter (room temperature)
- salt and pepper to taste
- butter and flour
- 1/2 lb. Mozzarella
- 3 tomatoes, peeled
- 1 tsp. oregano
- 1 tsp. basil
- 1/2 c. grated Parmesan
- 1/4 c. butter, melted
- Peel, cook and mash the potatoes.
- Season with butter, salt and pepper.
- Butter a deep pie plate. Sprinkle lightly with flour and spread the mashed potatoes on the bottom.
- Cut cheese into 1/2-inch slices and arrange half the slices on the potatoes.
- Cut the tomatoes into 1/2-inch slices and arrange all of them on the cheese. Sprinkle with oregano, basil, salt and pepper. On top, arrange rest of Mozzarella and Parmesan and pour over all the melted butter.
- Bake at 425u0b0 for 20 to 25 minutes.
- Serves 4 to 6.
