Vegetable Medley Casserole Recipe
- 2 Packages frzn vegetable medley
- 1 jar sliced mushrooms
- 3/4 pt. lowfat sour cream
- 1 lg. can French onions
- 1 can cream of mushroom soup
- 2 Packages shredded Cheddar cheese
- 1/4 c. lowfat milk
- 1/2 stick butter
- 2 Large eggs beaten
- Cook vegetables and drain.
- Add in butter and Large eggs, then season to taste.
- Fold in mushrooms and lowfat sour cream.
- Add in French onions.
- Smooth soup with lowfat milk and add in to other ingredients.
- Sprinkle cheese on top.
- Bake at 350 degrees for 35 to 40 min.
- Optional: Paprika may be sprinkled on top to help brown.
