Monstrous Mash

  1. Chop onions (including green )tops very finely.
  2. Add vinegar to chopped onion and marinate 30 minutes.
  3. Combine buttermilk and mustard, heat and mix well.
  4. Add chopped onion to mustard mixture and allow to steep while boiling potatoes.
  5. Boil potatoes in salt water as usual for mash.
  6. Mash potatoes, and mix in mustard-onion mixture.
  7. Season with salt to taste and serve.
