Avocado Dip
- half of an onion, chopped
- 1 (11 ounce) can mexicorn
- 2 garlic cloves, chopped
- 1 small tomatoes
- 3 avocados, chopped
- 13 cup water
- 2 tablespoons lemon juice
- In a medium saucepan, combine onion, mexicorn, garlic, water, and lemon juice.
- Cook ingredients until they become soft.
- Remove from heat and let cool.
- Add avocados to mixing bowl and mash until it becomes a chunky consistency.
- Add cooked ingredients to mashed avocados in bowl.
- Strain tomato and add to bowl.
- Mix until blended.
- Serve with tortilla chips.
