Apple Raisin Crepes Recipe
- 3/4 c. Quaker Oat Bran warm cereal, uncooked
- 1 tsp Baking pwdr
- 1 c. Skim lowfat milk
- 3 x Egg whites, slightly beaten
- 1 Tbsp. Margarine
- 1 c. Ricotta cheese, part skim
- 1 sm Apple, finely minced
- 2/3 c. Raisins
- 1 Tbsp. Sugar, confectioners
- 1/2 tsp Vanilla
- 2/3 c. Lite pancake syrup
- 1/4 tsp Cinnamon
- Combine oat bran and baking pwdr; add in to combined lowfat milk, egg whites and margarine, mixing well.
- Heat a 6 to 7 inch crepe pan or possibly skillet over medium heat; lightly coat with non-stick spray or possibly lightly oil before making each crepe.
- Pour about 1/4 c. batter onto warm prepared pan; immediately tilt pan to coat bottom proportionately.
- Cook 1 to 1 1/2 min or possibly till top looks dry.
- Turn; cook an additional minute.
- Stack between sheets of wax paper.
- Combine ricotta, apple, raisins, sugar and vanilla; mix well.
- Spoon about 2 tblsp.
- along less proportionately browned side of each crepe.
- Fold or possibly roll up sides to cover filling.
- Combine syrup and cinnamon; heat over medium heat about 2 min, stirring occasionally, or possibly till heated through.
- Just before serving, pour 2 tblsp.
- over each crepe.
