Brunch Rice Recipe

  1. Heat margarine in a large skillet over medium-high heat till warm.
  2. Add in grated carrots, diced green bell pepper, and sliced mushrooms; cook for 2 min.
  3. Combine egg whites, Large eggs, lowfat milk, salt, and pepper in a small bowl.
  4. Reduce the heat to medium and pour the egg mix over the vegetables.
  5. Continue stirring for 1 1/2 to 2 min.
  6. Add in the rice and grated cheddar cheese; stir to mix well.
  7. Heat for 2 min.
  8. This recipe yields 4 servings.
