Brunch Rice Recipe
- 1 1/2 c. brown rice
- 1 tsp margarine
- 3/4 c. grated carrot
- 3/4 c. diced green bell pepper
- 3/4 c. sliced mushroom
- 6 x egg whites
- 2 x Large eggs
- 1/2 c. lowfat milk
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 1/2 c. grated Cheddar cheese
- Heat margarine in a large skillet over medium-high heat till warm.
- Add in grated carrots, diced green bell pepper, and sliced mushrooms; cook for 2 min.
- Combine egg whites, Large eggs, lowfat milk, salt, and pepper in a small bowl.
- Reduce the heat to medium and pour the egg mix over the vegetables.
- Continue stirring for 1 1/2 to 2 min.
- Add in the rice and grated cheddar cheese; stir to mix well.
- Heat for 2 min.
- This recipe yields 4 servings.
