Salmon/Vodka Cream Sauce Recipe
- 8 tbsp. butter
- 1 thinly sliced onion
- 1 pound fresh spinach
- 6 (6 ounce.) salmon fillets
- 3 tbsp. olives oil
- 1 1/2 c. whipping cream
- 1/2 c. vodka
- 2 tbsp. liquid removed and crushed green peppercorns
- 3 tbsp. fresh lime juice
- 1/4 c. snipped chives
- Preheat oven to 350 degrees.
- Combine 4 Tbsp.
- butter and onion in large Dutch oven.
- Cover and bake till onion is golden, stirring occasionally, about 45 min.
- Stir spinach into onion and bake till just wilted, about 3 min.
- Remove from oven; keep hot.
- Season salmon with salt and pepper.
- heat oil in heavy large skillet over high heat.
- Add in salmon in batches and cook about 3 min per side for medium.
- Transfer to platter.
- Tent with foil to keep hot.
- Pour off excess oil from skillet.
- Add in cream and vodka and boil till slightly thickened, about 4 min.
- Add in green peppercorns and remaining 4 Tbsp.
- butter and stir till butter is just melted.
- Fold in lime juice; season with salt and pepper.
- Divide spinach and onion mix among plate.
- Top each with salmon fillet.
- Spoon sauce over.
- Sprinkle with snipped fresh chives and serve.
