Sandys Gourmet Mac & Cheese
- 5 slices Peppered Bacon
- 16 ounces, weight Rotini Pasta
- 1/4 cups Butter
- 1/4 cups Flour, Or More If Needed For Consistency
- 2 cups Milk
- Salt And Pepper, to taste
- 1 pound Sharp White Cheddar Cheese
- Seasoned Panko Bread Crumbs, For Topping
- Cook bacon until crisp; crumble.
- Set aside.
- Boil noodles in salt water.
- When done, drain.
- In meantime, melt butter on medium-high.
- Add flour and cook for a couple of minutes to cook off flour flavor.
- The desired result is a rouxadd extra flour if necessary.
- Whisk in milk, whisking often until it begins to thicken (about 5 minutes).
- When mixture is thickened, turn off heat and add in salt and pepper.
- Stir in shredded cheese.
- Stir until cheese is melted.
- Place noodles in baking dish.
- Pour cheese mixture over and fold in.
- Stir in bacon (can substitute or add in a vegetable or other favorite ingredient).
- Sprinkle a layer of bread crumbs on top.
- Bake at 375 degrees F for 30-45 minutes or until hot and bread crumbs are golden.
