Fast Pumpkin Pasta With Parmesan and Chives
- 8 ounces spaghetti
- 34 cup pumpkin puree
- 34 cup chicken broth
- 12 cup evaporated skim milk
- 2 teaspoons dried sage
- 14 teaspoon sea salt
- 4 tablespoons freshly grated parmesan cheese, divided
- 14 cup minced fresh chives
- Cook pasta.
- Drain, reserving 1/4 cup of water.
- Return pasta to pot.
- Meanwhile in a large saucepan, combine pumpkin, broth, milk, sage and salt.
- Heat, stirring, for 10 minutes.
- Add to the pasta along with half of the parmesan cheese and reserved water.
- Cook 1 more minute until thickened.
- Serve sprinkled with chives and remaining cheese.
