Baby Back Ribs - Candy Spicy Ginger
- 2 back ribs, full racks
- 1 tablespoon salt
- 1 12 tablespoons powdered ginger
- 12 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon ground coriander
- 1 tablespoon garlic
- 12 cup apple cider vinegar
- 4 tablespoons ginger, freshly crushed
- 1 chili pepper, red long chopped fine
- 13 cup honey or 13 cup molasses
- 12 tablespoon brown sugar
- 1 tablespoon ginger jam (optional)
- 1 garlic clove, crushed
- 3 teaspoons tomato paste
- 13 cup onion, chopped
- 12 lemon, juice of
- 12 teaspoon salt
- 12 teaspoon pepper
- Combine all dry spices and blend nicely.
- coat the back ribs and let stand to marinade for 3 hours or overnight in fridge.
- Pre-heat oven to 300 degrees.
- place ribs in covered roasting pan place in oven and roast for 2 1/2 hours.
- combine all ingredients for sauce in a saucepan and bring to gentle boil for 20 min or until reduced by 1/3 or thickened to desired consistency.
- once ribs have roasted remove from oven and coat with the sauce and place back in oven for 30 minute or bbq for 5 min per side and then coat with sauce and bbg for an additional 5 min per side on low heat.
