Thai Vinaigrette
- 1-1/2 whole limes, juice and pulp
- 3 tbsp. rice wine vinegar
- 1-1/2 tbsp. fish sauce
- 1-1/2 tsp. Tabasco sauce
- 1-1/2 tsp. white sugar
- 3/4 cup peanut oil
- 1-1/2 tbsp. cilantro, minced
- 3 cloves garlic, minced
- 4 whole scallions, thinly sliced
- Blend all ingredients in a bowl except the peanut oil.
- Drizzle about 3/4 cup peanut oil in while whisking in the bowl.
- Let stand for 1 hour before serving and whisk again before serving.
