Chocolate Fudge Nut Rolls - Chocolate Nut Fudge Rolls

  1. In a heavy saucepan, melt butter and chocolate over low heat.
  2. Add sugar, milk, honey and salt.
  3. Bring to a boil over medium heat, stirring occasionally.
  4. Cover and continue to boil for 2 minutes.
  5. Uncover and cook, without stirring until a candy thermometer reads 240 degrees(soft-ball stage).
  6. Remove from heat; stir in vinegar.
  7. Let cool to 110 degrees (45 C.).
  8. Add vanilla, beat vigorously by hand until mixture thickens and loses its gloss, about 8-10 minutes.
  9. Turn onto a buttered baking sheet and let stand until cool enough to handle.
  10. Knead for 2 to 3 minutes.
  11. Shape into 4 in.
  12. X 1 1/2 inch rolls.
  13. Place on waxed paper-lined baking sheets.
  14. Chill for 3 to 4 hours.
  15. Melt choclolate chips and shortening in a double boiler or microwave-safe bowl.
  16. Dip rolls in chocolate; roll in nuts.
  17. Place on waxed paper-lined baking sheets and chill until firm.
  18. Cut into 1/4 in slices.
