Lemon-Sour Cream Poppy Seed Muffins
- 1-1/2 cups flour
- 1/2 cup sugar
- 2 Tbsp. poppy seed
- 1 tsp. CALUMET Baking Powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup butter, melted
- 1 Tbsp. lemon zest
- 2 Tbsp. lemon juice
- 1/2 tsp. vanilla
- Heat oven to 350F.
- Mix first 6 ingredients in large bowl.
- Beat eggs in small bowl.
- Add sour cream, butter, lemon zest, lemon juice and vanilla; mix well.
- Add to flour mixture; stir just until moistened.
- Spoon batter into 12 muffin cups sprayed with cooking spray.
- Bake 18 to 20 min.
- or until toothpick inserted in centers comes out clean.
- Cool 5 min.
- before removing from pan.
