Lemon-Sour Cream Poppy Seed Muffins

  1. Heat oven to 350F.
  2. Mix first 6 ingredients in large bowl.
  3. Beat eggs in small bowl.
  4. Add sour cream, butter, lemon zest, lemon juice and vanilla; mix well.
  5. Add to flour mixture; stir just until moistened.
  6. Spoon batter into 12 muffin cups sprayed with cooking spray.
  7. Bake 18 to 20 min.
  8. or until toothpick inserted in centers comes out clean.
  9. Cool 5 min.
  10. before removing from pan.
