Creamy Chicken (Or Turkey) and Rice Soup
- 8 cups chicken broth (canned or homemade) or 8 cups turkey broth
- 1 medium onion, chopped
- 3 stalks celery, chopped
- 3 large carrots, chopped
- 3 tablespoons oil or 3 tablespoons butter
- 14 cup brown rice, uncooked
- 14 cup wild rice, uncooked
- 14 cup white rice, uncooked
- 3 cups cooked chicken or 3 cups turkey, diced
- 1 cup sour cream
- 3 cups cheddar cheese, shredded
- salt, to taste
- black pepper, to taste
- Saute onions, celery, and carrots in oil.
- Add broth and bring to a boil.
- Add the brown and wild rice.
- Simmer for 45 minutes.
- Add the white rice.
- Simmer for 15 minutes.
- Add the cooked chicken or turkey, sour cream, and cheddar cheese.
- Heat through, do not boil.
- Salt and pepper to taste.
