Black Olive Tapenade
- 9 ounces black olives, with pits to ensure more flavor
- 1 garlic clove
- 6 anchovy fillets
- salt
- fresh ground black pepper
- extra virgin olive oil
- 1 lemon, juice of
- Pit the olives by squeezing or smashing them and removing the pit.
- Place the olives, garlic, anchovies in a small food processor until mixture is smooth.
- Add salt and fresh ground pepper, and correct any seasoning.
- Add olive oil to loosen.
- Add lemon juice to taste.
