Cornish Hens with Wild Rice.
- 3 tbsp melted butter or olive oil
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 tsp rosemary
- 1 tsp black pepper
- 2 Cornish Hens, 16 to 20 ounces each
- 1 cup black or wild rice
- 1/2 cup brown rice
- 2 tbsp butter
- 1 tsp garlic powder
- 2 tbsp chopped onion
- 1 dash basil
- melt butter add garlic powder, basil, rosemary, and pepper
- rub mixture on hens
- place hens on rotisserie, cook for 45 minutes, until juices no longer pink and skin is golden
- For The Rice Side
- melt butter in pan
- saute onion
- add rice and 3 cups water
- heat to boiling then cover and reduce heat
- stir in garlic powder and basil
- simmer for 45 to 60 minutes until tender
- for 2 hearty servings serve chickens whole, for two light serving split chickens
- serve with the rice as a side
