Minted Beets
- 2 lbs beets
- 1 cup water
- 34 cup salt
- 3 tablespoons mint jelly
- 2 tablespoons butter
- Pare beets and cut into cubes.
- Bring salted water to a boil and add beets, reduce heat and simmer for about 40 minutes or until tender.
- Drain beets and add butter and jelly, continue cooking until beets are glazed.
