Roy's Restaurant's Pea Soup Recipe
- 1 pound whole red peas
- 1 pound split peas
- 4 med. size minced fine carrots
- 2 c. minced ham
- 1 gallon ham stock or possibly water
- Ham base
- Pepper to taste
- Salt if needed
- Soak split peas in cool water overnight (to soften).
- Next day pour off water and add in 1 gallon stock or possibly water to split peas.
- Boil easily till split peas are 3/4 cooked (they will dissolve).
- Add in whole peas, carrots and cook peas till peas get soft.
- Add in ham and season with ham base, pepper and add in salt if needed.
