Chocolate Protein Nuggets - Low Sugar

  1. Preheat oven to 350 degrees.
  2. Combine first 8 ingredients in a medium bowl using a wire whisk.
  3. Whisk together rest of ingredients, except chocolate chips, in a large bowl using a whisk.
  4. Whisk until sugar is dissolved.
  5. Add dry to wet in thirds combining with a sturdy mixing spoon after each addition.
  6. Mix in chocolate chips.
  7. Will be very stiff!
  8. Lightly spray a cooking sheet with non-stick spray.
  9. Drop balls the size of a large walnut spacing 1-2 inches apart.
  10. Flatten slightly as the cookies will not spread much.
  11. Bake for 10 minutes.
  12. Remove to cooling rack.
  13. Cool completely.
  14. Note: My protein powder is sweetened with sucralose.
  15. I don't know how much sweetness it contributes or if you will need to adjust the recipe for unsweetened protein powder.
