Yiayia'S Spanakopita(Spinach Pie)
- 1/4 c. olive oil
- 2 lb. spinach (fresh), rinsed, drained and chopped
- 1 bunch scallions
- 1/2 lb. Feta cheese, crumbled
- 16 oz. cottage cheese
- 6 eggs
- 2 cubes melted butter
- 1/2 lb. phyllo dough (pastry sheets)
- white pepper
- Brown onion in olive oil.
- Beat eggs and add to spinach. Break up Feta cheese in crumbled pieces and mix with cottage cheese.
- Add to spinach.
- Add browned onions; season with pepper. Butter a 9 x 13-inch pan and place 10 sheets phyllo into pan, brushing each with melted butter.
- Spread spinach mixture on top. Cover with 10 sheets of phyllo, buttering each phyllo as you add it.
- Butter top well and cut into squares about 2 x 3-inches.
- Bake at 350u0b0 for one hour.
