Grilled Eggplant

  1. Coat eggplant slices with dressing.
  2. Arrange eggplant slices in single layer on cookie sheet.
  3. Broil 5 to 7 inches from heat for 8 minutes on each side or until lightly browned.
  4. Place eggplant slices in single layer in 10x6-inch baking dish.
  5. Top with tomato slices.
  6. Top evenly with cheese and sauce.
  7. Bake at 350F for 30 minutes until thoroughly heated.
  8. Variations: Prepare as directed, adding 2 cups cooked sliced mushrooms to eggplant.
  9. For a noodle lasagna, prepare as directed, alternating layers of eggplant and cheese with cooked lasagna noodles.
  10. Garnish with fresh basil leaves or parsley sprigs.
