Grilled Eggplant
- 1 large eggplant, peeled, cut into 1/2-inch slices
- 1/2 cup SEVEN SEAS FREE VIVA Italian Fat Free Dressing
- 2 tomatoes, thinly sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/2 cups KRAFT 2% Milk Shredded Mozzarella Cheese
- 1 cup DI GIORNO Marinara Sauce
- Coat eggplant slices with dressing.
- Arrange eggplant slices in single layer on cookie sheet.
- Broil 5 to 7 inches from heat for 8 minutes on each side or until lightly browned.
- Place eggplant slices in single layer in 10x6-inch baking dish.
- Top with tomato slices.
- Top evenly with cheese and sauce.
- Bake at 350F for 30 minutes until thoroughly heated.
- Variations: Prepare as directed, adding 2 cups cooked sliced mushrooms to eggplant.
- For a noodle lasagna, prepare as directed, alternating layers of eggplant and cheese with cooked lasagna noodles.
- Garnish with fresh basil leaves or parsley sprigs.
