Pecan Meringue Pie Recipe

  1. Combine 1 c. sugar, flour and salt in a medium saucepan.
  2. Slowly stir in lowfat milk.
  3. Cook over medium heat, stirring constantly, till thickened.
  4. Stir a small amount of warm mix into beaten egg yolks.
  5. Stir back into remaining warm mix.
  6. Cook, stirring for 2 min.
  7. Remove from heat.
  8. Stir in butter, 2 tsp.
  9. vanilla, pecans, yellow food coloring.
  10. Cold well.
  11. Pour mix into pie shell.
  12. Beat egg white and cream of tartar till frothy.
  13. Gradually add in 6 Tbsp.
  14. sugar, beating till stiff.
  15. Beat in 1 tsp.
  16. vanilla.
  17. Spread over filling.
  18. Bake at 400 degrees for 5 min or possibly till golden.
  19. Cold.
