Pecan Meringue Pie Recipe
- 1 c. sugar
- 1/3 c. flour
- 1/2 teaspoon salt
- 2 c. lowfat milk
- 4 Large eggs, separated
- 1 tbsp. butter
- 2 teaspoon vanilla
- 1 1/2 c. finely minced pecans
- 4 drops yellow food coloring
- 1 baked 10 inch pie shell
- 1/8 teaspoon cream of tartar
- 6 tbsp. sugar
- 1 teaspoon vanilla
- Combine 1 c. sugar, flour and salt in a medium saucepan.
- Slowly stir in lowfat milk.
- Cook over medium heat, stirring constantly, till thickened.
- Stir a small amount of warm mix into beaten egg yolks.
- Stir back into remaining warm mix.
- Cook, stirring for 2 min.
- Remove from heat.
- Stir in butter, 2 tsp.
- vanilla, pecans, yellow food coloring.
- Cold well.
- Pour mix into pie shell.
- Beat egg white and cream of tartar till frothy.
- Gradually add in 6 Tbsp.
- sugar, beating till stiff.
- Beat in 1 tsp.
- vanilla.
- Spread over filling.
- Bake at 400 degrees for 5 min or possibly till golden.
- Cold.
