Bayou Pork Chops

  1. Spray large skillet with cooking spray; heat over medium heat until hot.
  2. Cook pork chops until browned, 3-4 minutes per side.
  3. Remove from skillet.
  4. Add onion, bell pepper, celery and garlic to skillet; saute until tender 3-4 minutes.
  5. Stir in tomatoes and chilies; heat to boiling.
  6. Reduce heat and simmer, uncovered, 5 minutes.
  7. Add pork chops; simmer, covered, until pork chops are tender, about 20 minutes.
  8. Stir in parsley.
  9. Season to taste with salt and pepper.
  10. Serve over rice.
