Chicken Artichoke Rice Salad Recipe
- 1 pkg. chicken Rice-a-Roni
- 2 (6 ounce.) jars marinated artichoke hearts
- 1/3 c. mayonnaise
- 1/2 teaspoon curry pwdr
- 3 green onions, minced
- 1 green pepper, minced
- 1 sm. can sliced black olives, liquid removed
- Prepare Rice-a-Roni according to package directions.
- Drain artichokes, saving marinade.
- Mix marinade with mayonnaise and curry pwdr.
- Stir into rice mix.
- Mix remaining ingredients into rice mix.
- Chill, keeps several days.
- Serves 8.
