Baked Barbecue Tofu and Peppers

  1. Preheat the oven to 425F.
  2. Cut the tofu into 1/2-inch-thick slices, and blot well between clean tea towels or several layers of paper towel.
  3. Cut the slices into strips or dice.
  4. Stir all the ingredients together in a mixing bowl, and transfer to a foillined baking sheet or roasting pan.
  5. Bake for 15 minutes, then stir and bake for another 10 minutes, and serve.
