Baked Barbecue Tofu and Peppers
- 1 pound firm or extra-firm tofu
- 2 green or red bell peppers, or 1 of each, cut into approximately 1/2 by 2-inch strips
- 1 large onion, halved and thinly sliced, rings separated
- 3/4 cup natural barbecue sauce, or as needed
- Preheat the oven to 425F.
- Cut the tofu into 1/2-inch-thick slices, and blot well between clean tea towels or several layers of paper towel.
- Cut the slices into strips or dice.
- Stir all the ingredients together in a mixing bowl, and transfer to a foillined baking sheet or roasting pan.
- Bake for 15 minutes, then stir and bake for another 10 minutes, and serve.
