sig's Garlicky Sweetcorn
- 8 halved fresh, ripe sweetcorn. or 4 whole cobs
- 3/4 cup of melted butter
- 1 1/2 tbsp olive oil
- 2 large cloves garlic,crushed
- 100 grams of homemade white or wholemeal breadcrumbs
- 1/2 tbsp dried parsley
- 1/2 tbsp dried coriander
- 1 pinch each salt and cayenne pepper (though I do vary the herbs other than garlic occasionally ,just for something different)
- pull husks and silks off the cobs, boil the corn in salted water until tender.
- Drain and cool.
- melt the butter in a saucepan add the garlic, olive oil,salt and pepper.
- Pour into a shallow dish, put the breadcrumbs and herbs into another dish .
- roll the cooled corn first in the melted garlic butter until well soaked, then roll in breadcrumbs until well coated.
- cook in hot griddle pan, pan or on BBQ for ten minutes turning so you achieve a slightly charred golden crust.
