Citrus Catfish
- 4 lbs catfish, whole, skinned
- 1 orange
- 1 lime
- 1 tablespoon basil, fresh, chopped
- 1 teaspoon mint leaf, fresh, chopped
- 12 tablespoon extra virgin olive oil
- Slice orange and lime thin.
- In belly cavity overlap and alternate orange and lime slices.
- Rub fish lightly with olive oil.
- Sprinkle basil and mint over both sides of catfish.
- Overlap and alternate orange and lime slices on top of catfish.
- Bake at 325 degrees F until meat flakes with fork.
- About 20 minutes.
