Mediterranean Baked Fish
- 34 lb grouper fillet
- salt and pepper
- 2 teaspoons olive oil
- 2 tablespoons pine nuts
- 6 green olives, pitted and cut in half
- 12 cup pimiento, drained and sliced
- Preheat oven to 400 degrees F. Line a baking sheet with aluminium foil.
- Rinse groupe and pat dry with paper towel.
- Sprinkle fish with salt and pepper to taste.
- Place on prepared baking sheet and drizzle oil on top.
- Bake 10 minutes.
- Spoon pine nuts, olives, and pimiento over fish.
- Return to oven for 10 minutes.
