Apple Raisin Muffins
- 2 cups mcintosh apples, chopped
- 1 cup raisins
- 2 cups granulated sugar
- 2 cups nonfat sour cream
- 23 cup canola oil
- 2 cups white flour
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons salt
- 12 teaspoon baking powder
- Heat oven to 400 degrees.
- No mixer needed!
- Stir oil and sugar until evenly mixed.
- Stir in sour cream until smooth.
- Combine dry ingredients and stir into cream mixture just until moistened.
- Fold in the apples and raisins or other desired fruit.
- Fill paper lined baking cups 3/4 full.
- I use a standard ice cream scoop to make them of uniform size.
- Bake about 18 minutes or until they test done.
- If baking two pans, bake them separately.
