Spinach and Meat Lasagna
- 10 ounces, weight Fresh Spinach, Stemmed And Washed
- 2 Tablespoons Olive Oil
- 3 cloves Garlic, Pressed
- 1 pound Ground Beef
- 1 pound Bulk Italian Sausage (no Casings)
- 1 cup Ricotta Cheese
- 3/4 cups Cottage Cheese
- 2 cups Mozzarella Cheese, Divided
- 1/2 cups Parmesan Cheese
- 2 whole Eggs
- 1/2 teaspoons Kosher Salt
- 5 whole Cranks Black Pepper
- 1/4 cups Fresh Parsley, Chopped
- 8 cups Spaghetti Sauce
- 1 box (13.25 Oz. Size) Lasagna Noodles, Cooked According To Package Directions
- Saute spinach in olive oil with pressed garlic until wilted; set aside.
- Brown beef and sausage until fully cooked, drain grease.
- In a small bowl, mix ricotta cheese, cottage cheese, 1 cup mozzarella cheese, parmesan cheese, eggs, salt, pepper, and parsley.
- Set aside.
- In a 13x9 baking dish, pour 2 cups of sauce in the bottom of the pan.
- Lay cooked noodles in a single layer.
- Cover with 2 cup of sauce, 1/2 of meat, and half of cheese filling.
- Top with 1/2 of spinach mixture.
- Repeat layer of noodles, sauce, meat, cheese and spinach.
- Top with layer of noodles and remaining sauce.
- Sprinkle with remaining 1 cup mozzarella cheese.
- Cover with foil.
- Bake in a 350 degrees F oven for about 45 minutes.
- Remove foil and bake an additional 10-15 minutes.
- Let stand 10 minutes before serving.
