Mexican Corn Bread Recipe
- 1 1/2 c. cornmeal
- 1/2 c. flour
- 3 teaspoon baking pwdr
- 1 teaspoon salt
- 2 Large eggs
- 2/3 c. oil
- 1 c. lowfat sour cream
- 1 c. cream style corn
- 3 peppers, minced
- 1 c. grated cheese
- Mix dry ingredients.
- Add in everything else except the cheese.
- Pour 1/2 the mix into greased baking tin.
- Sprinkle on 1/2 the cheese; add in remainder of mix and remainder of cheese.
- Bake 30 to 40 min at 350 degrees.
