Old Virginia Nut Brittle

  1. Bring water to a boil in a large saucepan.
  2. Stir in sugar until dissolved.
  3. Stir in corn syrup.
  4. Cook mixture to 250 degrees F on candy thermometer.
  5. Add salt and peanuts.
  6. Cook to 295 degrees F, stirring occasionally.
  7. Remove from heat and stir in butter, soda, and vanilla until well mixed.
  8. Our onto greased marble slab or stoneware platter and spread evenly.
  9. Let cool and harden.
  10. Break into pieces.
