  1. Combine flours, ginger, cinnamon, cloves and cayenne pepper in large mixing bowl.
  2. Set aside.
  3. Beat butter and brown sugar together in bowl of electric mixer 1 minute, or until fluffy.
  4. Add molasses, and beat until smooth.
  5. Reduce speed of mixer, add egg and milk, and beat until smooth.
  6. Gradually beat in flour mixture until soft dough forms.
  7. Divide dough into three disks.
  8. Wrap each disk in plastic wrap, and chill 1 hour, or overnight.
  9. Preheat oven to 350F.
  10. Coat 2 baking sheets with cooking spray.
  11. Dust work surface and one dough disk with whole wheat pastry flour or all-purpose flour.
  12. Roll dough out to 1/4-inch thickness.
  13. Cut into gingermen or other shapes with cookie cutters, and place on prepared baking sheets.
  14. Gather excess dough, and return to fridge.
  15. Repeat with remaining dough disks and extra dough.
  16. Bake cookies 10 minutes, or until slightly puffy and dry in centers.
  17. Transfer to wire rack to cool.
  18. Decorate with icing, if desired.
