Cobb Salad

  1. Crisp-cook soy bacon according to package directions.
  2. Remove to plate.
  3. When cool enough to handle, cut into 12-inch pieces.
  4. In large bowl, combine soy bacon and tofu.
  5. In small bowl, toss avocado with lemon juice, then add to tofu mixture along with tomatoes and lettuce.
  6. Add dressing, toss to coat and serve.
