Thai Tuna Cakes
- 425g can tuna, drained
- 500g sweet potato, peeled, cooked and mashed
- 5 KRAFT FREE Singles, crumbled Target 2 For $5.00 thru 02/06
- 1 red onion, finely chopped
- 1/4 tablespoons coriander, roughly chopped
- 2 tablespoons Thai red curry paste
- extra flour
- non-stick cooking spray
- Dipping Sauce
- 1/2 cup KRAFT FREE Mayonnaise
- 1/4 cup sweet chilli sauce, combined with
- 2 tablespoons coriander, finely chopped
- Combine ingredients in a large bowl.
- Season to taste.
- Shape mixture into twelve patty shapes and roll in extra flour to lightly coat.
- Heat a non-stick frypan, spray lightly with cooking oil.
- Cook the cakes over moderate heat for 5 minutes or until browned and cooked through.
- Combine all ingredients to make the sauce.
- Serve with hot Thai Tuna Cakes.
