Pork and Pickled Plum Cheese Rolls

  1. Remove the seeds from the pickled plums, and mince with a knife to a paste.
  2. Cut the stems off the shiso leaves.
  3. Cut the baby cheese vertically into 8 pieces.
  4. Season both sides of the pork with salt and pepper.
  5. Spread out the meat, place the shiso leaves on top, spread the pickled plum paste from Step 1 on top, add in the cheese on top of that, and roll it up.
  6. Lightly coat the rolled pork in flour.
  7. Heat vegetable oil in a frying pan, and cook the pork rolls (Lower the heat to not burn them).
  8. Arrange on plates once it has thoroughly cooked through.
  9. Quickly wipe the frying pan clean with a paper towel.
  10. Add butter and ponzu sauce to the frying pan, let the butter melt, and top the pork rolls with the dressing; then it is done.
