Hill Of Beans Salad
- 4 strips bacon, chopped
- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1 tsp. seasoned salt
- 1/4 tsp. pepper
- 2/3 c. wine vinegar
- 16 oz. can cut green beans
- 16 oz. can cut wax beans
- 15 oz. can red kidney beans
- 1 onion, sliced
- 1/4 c. celery, sliced thin
- Put bacon in 2-quart casserole.
- Microwave on High for 3 to 4 minutes, stirring after 2 minutes.
- With slotted spoon, remove bacon and place on towels to drain.
- Blend sugar and cornstarch with bacon drippings.
- Stir in salt, pepper and vinegar. Microwave on High for 3 to 4 minutes, until thick.
- Add drained beans, onion and celery slices to sauce in casserole, stirring well.
- Cover.
- Microwave on High for 6 minutes, stirring after 3 minutes.
- Let stand 10 minutes before serving.
- Sprinkle bacon on top.
- Preheat before serving.
- Even better the next day.
- Makes 4 servings.
