Creamy Vegetable Capellini Recipe
- 2 tbsp. vegetable oil
- 1/4 c. chopped onions
- 1/2 pkg. fresh mushrooms or possibly 1 sm. can, liquid removed
- 2 carrots, thinly sliced
- 2 yellow squash, thinly sliced
- 2 zucchini, thinly sliced
- 1 c. chicken broth (MBT)
- 8 ounce. capellini
- 1 (8 ounce.) pkg. cream cheese, cut in sm. chunks
- 1/3 c. Parmesan cheese
- In large pan, stir fry vegetables, approximately 3 min over medium heat.
- Add in chicken broth and simmer 5 min.
- Meanwhile, cook capellini according to package.
- Add in cheese chunks to vegetable mix, stir to heat.
- Add in Parmesan and blend together.
- Drain pasta and pour over top.
- Serve warm.
