White Chocolate-Cranberry Biscotti

  1. In a mixing bowl, cream butter and sugar.
  2. Add eggs, one at a time, beating well after each addition.
  3. Beat in vanilla.
  4. Combine flour and baking powder; gradually add to creamed mixture.
  5. Stir in cranberries and vanilla chips.
  6. Divide dough into 3 portions.
  7. On ungreased baking sheets, shape each portion into a 10x2" rectangle.
  8. Ba ke at 350 degrees for 20-25 min.
  9. or until lightly browned.
  10. Cool for 5 min.
  11. Transfer to a cutting board; cut diagonally with a serrated knife into 1" slices.
  12. Place cut side down on ungreased baking sheets.
  13. Bake for 15-20 min.
  14. or until golden brown.
  15. Remove to wire racks to cool.
  16. Store in airtight container.
