Baked Rockfish Recipe
- 1/2 c. Basil-Garlic Sauce * see note
- 3 Tbsp. Lemon juice
- 1 x Carrot minced
- 1 x Leek minced
- 2 Tbsp. Hard butter
- 2 lb Rockfish or possibly red snapper drawn
- Heat oven to 375 degrees.
- Mix Basil-Garlic Sauce, lemon juice, carrot, and leek.
- Cut butter into small pcs.
- Place in rectangular baking dish, 13- by 9- by 2-inches.
- Place rockfish on butter.
- Spread vegetable mix over fish.
- Cover and bake 40 min or possibly till fish flakes easily with fork.
- This recipe serves 4.
