Cheesecake Bars
- 2 c. all-purpose flour
- 3/4 c. softened butter
- 1/3 c. light corn syrup
- 1/4 c. granulated sugar
- 1/2 tsp. salt
- 2 (8 oz.) pkg. cream cheese, softened
- 3 eggs
- 1 c. light corn syrup
- 2 tsp. vanilla
- 1 c. strawberry jam
- powdered sugar
- Heat oven to 375u0b0.
- Grease 13 x 9-inch pan.
- Mix flour, butter, 1/3 cup corn syrup, the granulated sugar and salt in large bowl.
- Spread evenly in pan.
- Blend cream cheese until smooth. Beat in eggs until well blended.
- Beat in 1 cup corn syrup and the vanilla until smooth.
- Pour over dough.
- Bake 35 to 40 minutes or until edges are light brown and filling is set.
- Spread with jam. Refrigerate at least 3 hours.
- Cut into 2-inch bars.
- Sprinkle with powdered sugar.
