Dorothy's Sweet and Sour Chicken
- 2 pounds chicken cut up into parts
- 8 ounces pineapple chunks
- 1 cup chicken broth
- 2 tablespoons vegetable shortening
- 2 tablespoons brown sugar
- 1/4 cup vinegar
- 2 teaspoons soy sauce, tamari
- 1 large onions
- 1 medium green bell peppers
- 3 tablespoons cornstarch
- 1/4 cup water
- Drain pineapple, reserving syrup.
- In skillet brown chicken in shortening.
- Pour off fat.
- Add reserved syrup, broth, brown sugar, vinegar, soy sauce and garlic.
- Cover and cook over low heat 40 minutes.
- Add green pepper amd pineapple cook 5 minutes.
- Combine cornstarch and water gradually stir into sauce.
