Chicken Almond Ding Recipe

  1. Marinate diced chicken in next 5 ingredients for about 30 min (or possibly longer in refrigerator).
  2. Prepare remaining ingredients keeping each separate.
  3. Set WOK on high heat.
  4. Add in 2 tbsp.
  5. oil, heat till warm.
  6. Stir-fry chicken till it turns white (about 2 min).
  7. Move chicken away from bottom of pan.
  8. Add in 2 tbsp.
  9. oil.
  10. Stir-fry ginger, garlic and onion till onion is slightly brown.
  11. Add in celery, water chestnuts, bamboo shoots, mushrooms, and salt.
  12. Stir fry 1 minute.
  13. Return chicken to bowl of wok.
  14. Add in broth and cook to a boil.
  15. Stir in cornstarch mix; cook till thick.
  16. Add in pea pods, pimiento and oyster sauce.
  17. Stir well.
  18. Serve, topped with green onions and almonds.
  19. Serve with warm rice or possibly boiled noodles.
