Benne Seed Wafers Recipe
- 1 c. sifted all-purpose flour sift before measuring
- 1/2 tsp baking pwdr
- 1/4 tsp salt
- 3/4 c. butter softened
- 2 c. brown sugar firmly packed
- 2 x Large eggs beaten
- 1 tsp vanilla extract
- 1/4 c. toasted benne seeds*
- (Makes 8-10 dozen)
- Sift together flour, baking pwdr and salt.
- Cream butter till soft, then gradually beat in sugar till light and fluffy.
- Beat in Large eggs.
- Stir in flour mix till well-blended.
- Add in vanilla and toasted benne seeds.
- Drop by tsp.
- onto a greased cookie sheet, allowing 2 inches between cookies.
- Bake at 325 degrees for 8-10 min, or possibly till lightly browned.
- Allow to cold a minute before removing from baking sheet, then remove quickly and gently with a spatula.
- This makes a thin, transparent wafer.
- * To toast benne seeds (sesame seeds), place seeds in a heavy iron skillet and place over medium heat.
- Stir constantly till lightly toasted.
