Classic Cheddar Muffins
- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 Tbsp. baking powder
- 1/2 tsp. each: baking soda and salt
- 1 1/2 cups grated Cracker Barrel Cheddar Cheese
- 1 cup plain yogurt
- 1/4 cup butter or margarine, melted
- 2 eggs, beaten
- apple jelly (optional)
- COMBINE flour, sugar, baking powder and soda, and salt.
- Stir in cheese.
- Blend together yogurt, butter and eggs.
- ADD liquid to dry ingredients.
- Stir only until moistened.
- Spoon into 12 large greased muffin cups.
- BAKE at 400F (200C) for 20 minutes or until lightly browned.
- Serve warm with apple jelly, if desired.
