Bacon Corncake Appetizers

  1. Melt butter in medium skillet on medium heat.
  2. Add corn, onions, bacon bits and pepper; cook 5 min.
  3. or until corn just begins to turn golden, stirring frequently.
  4. Cool.
  5. Mix milk, egg and mustard in large bowl with whisk until blended.
  6. Stir in baking mix until smooth; blend in corn mixture.
  7. Ladle batter onto hot nonstick griddle or skillet, using rounded tablespoon of batter for each corncake.
  8. Cook until bubbles form around edges; turn to brown other side.
  9. Spread 1 tsp.
  10. cream cheese spread onto each corncake.
  11. Fold filled corncake.
  12. Serve immediately.
