Moms Taco Salad
- 1 pound Ground Beef (or Ground Turkey, Chicken)
- 1 package Taco Seasoning, 1 Ounce Packet
- 23 cups Water (or Whatever Amount Your Packet Of Taco Seasoning Suggests)
- 1 bag (12 Oz) Doritos (nacho Cheese Flavored Tortilla Chips)
- 1 can (15 Oz) Dark Red Kidney Beans (drained And Rinsed)
- 1/2 heads Lettuce, Shredded
- 3 whole Roma Tomatoes, Diced
- 1 block (1 Pound) Medium Cheddar Cheese, Shredded
- 1 container (12 Oz) Sour Cream
- 1 bottle (16 Oz) Catalina Dressing
- Brown beef over medium heat.
- Once fully browned, drain it of excess fat.
- Add packet of taco seasoning to the meat (whichever one is your favorite or you can make your own).
- Add the amount of water specified on the package of seasoning.
- Let water reduce until the beef mixture is thick and the flavors melded.
- Turn off heat.
- Crush a handful (or more) of Doritos and place on plate.
- Next layer with a little of the taco beef mixture.
- Then add whatever toppings you prefer, kidney beans, shredded lettuce, cheese, tomatoes, sour cream, etc.
- Then lightly drizzle with Catalina dressing.
- This is great to double to feed a large crowd.
- Would be wonderful as a taco salad bar!
- Cooks Note: Some other toppings include: salsa, pinto beans, olives or jalapenos.
