Smoked Turkey Wraps with Blue Cheese and Red Onion
- 1 lg. red onion, peeled and sliced 1/3-inch thick
- Olive oil
- 1 cup crumbled blue cheese
- 3 tbsp. sour cream
- 1 tbsp. minced fresh thyme
- 4 plain
- flavored sandwich wraps
- 8 good size radicchio leaves
- 3/4 lb. sliced smoked turkey
- 2 tbsp. Dijon mustard
- Preheat a griddle pan over medium-high heat.
- Brush red onion with some olive oil.
- Grill onions for about 2 minutes on each side, until brown.
- Add salt and pepper to taste and let cool.
- Mix blue cheese, sour cream and thyme in a small bowl to blend.
- Spread blue cheese mixture over the 4 wraps, making sure to cover up to the edges (it helps to hold the sandwich together like a glue).
- Top blue cheese mixture with the now cooled grilled red onion, radicchio, then the smoked turkey.
- Spread the mustard over the top.
- Roll the wraps up tight making sure that the edges are folded in.
- Cut each sandwich in half.
- Wrap each tightly in plastic wrap and refrigerate for at least 2 hours.
