Mom's Pearl Tapioca Custard Recipe

  1. Soak tapioca in a little water overnight.
  2. Add in 1/4 tsp.
  3. salt.
  4. Boil 1 qt lowfat milk and pour over tapioca while still warm.
  5. Let cold, then add in 1/2 c. sugar, 1 egg and 2 egg yolks well beaten.
  6. (Save 2 egg whites for meringue.)
  7. Pour into buttered baking dish and bake.
  8. Custard is done when inserted knife comes out clean.
  9. Beat 2 egg whites till they stand in peaks and cover custard.
  10. Return to oven just long sufficient till they turn golden.
  11. Remove and cold.
  12. One of our family's favorite light desserts.
