Sunshine Meatloaf
- 3 lbs ground beef (80% lean)
- 1 onion (chopped)
- salt and pepper
- granulated garlic powder
- 1 teaspoon tarragon
- 1 teaspoon basil
- 12-34 cup plain breadcrumbs
- 2 eggs (raw)
- 4 -6 large eggs (hard-boiled)
- 1 (16 ounce) can tomato sauce
- 1 cup ketchup
- 2 teaspoons Worcestershire sauce
- 12 cup red wine
- 2 tablespoons dried parsley flakes
- In a large bowl mix together ground round, salt, pepper, garlic, tarragon, basil, bread crumbs, raw eggs, Worcestershire, red wine& parsley flakes.
- In a 13 x 9 pyrex baking dish form half of the meat mixture into a free form oval shape.
- Place hard-boiled eggs, end to end, lengthwise down the center of the meat.
- Arrange the remaining half of meat to cover the eggs...
- Mix the tomato sauce& ketchup& smother it over the top of the meatloaf... Preheat oven to 350 degrees& bake, uncovered, 1 1/2 hours... Slice& serve.
- so that each slice has a slice of hard-boiled egg that resembles the sun.
